BROWNIES BLUEBERRY CHEESE

Fudgy brownies with creamy cheesecake and swirls of blueberry bliss

INGREDIENTS

Brownies

  • 190g dark chocolate
  • ⁠120g salted butter
  • 2 eggs (Grade A/B) (room temperature)
  • ⁠3/4 cup caster sugar
  • 1 tsp vanilla essence
  • 1 cup all-purpose flour
  • 2 tbsp cocoa powder
  • 1/2 tsp baking powder

Cheese (topping)

  • 250g cream cheese (room temperature)
  • 4 tbsp caster sugar
  • ⁠1 egg (Grade A/B)
  • 1 tsp vanilla essence
  • Fruttose Blueberry Filling & Topping

📌 Baking pan size 8 inch
📌 Preheat the oven & bake the brownies at 160° for 30-35 minutes. And bake cheese layer (top heat), 140°, 15-20 minutes.

 

METHOD

  1. Microwave or double boiled dark chocolate with salted butter until fully melted.
  2. Combine eggs, caster sugar, vanilla essence and whisk until well combined.
  3. Pour the warm chocolate butter mixture into the egg mixture, and whisk until combined.
  4. Add all-purpose flour, cocoa powder and baking powder. Whisk until combined. Don’t overmix.
  5. Pour into 8x8 inch baking pan. Bake in a preheated oven at 160°, for 30-35 minutes.
  6. Prepare the cream cheese layer. Combine all the ingredients and whisk until smooth/combined.
  7. When the brownies are ready, pour the cream cheese mixture on top of the brownies. Piping the Fruttose Blueberry Filling & Topping and bake again (top heat), at 140° for 15-20 minutes.
  8. Ready to serve.
