Ingredients 材料:
A)
Egg 鸡蛋 320g
Egg Yolk 蛋黄 80g
Sugar 幼糖 240g
B)
Super Sponge 蛋糕起发油 15g
C)
Low Proten Flour 低筋面粉 140g
D)
Unsalted Butter 无盐奶油 40g
Fresh Milk 全脂鲜奶 40g
E)
Pineapple Pie Filling 菠萝果馅 100g
Method 做法:
1. Double boil ingredient A until 35°C and beat quickly until foaming.
材料(A)隔水加热至35°C,快速打至发泡。
2. Add ingredient B & C into ingredient A and continue beating.
把材料(B)和(C)加入(A)打至完全起发。
3. Add in ingredients D & E and mix well.
加入材料 (D) + (E) 搅拌拌匀就可。
Temperature 200°C/170°C. Time 20 minutes.
温度200°C/170°C。时间20分钟。
