- 180g Sugar
- 40g Milk Powder
- 9g Instant Yeast
- 500g Egg
- 250g Cold Water

- 600g Fruttose Mango Filling & Topping
- 7g Sea Salt
METHOD
- Mix well ingredients A.
- Add in ingredients B and whip until smooth. Rest 40 minutes.
- Mix well ingredients C and set aside.
POLO SKIN

- 140g Butter
- 280g Sugar
- 120g Egg
- 360g Low protein flour
- 40g Almond powder
METHOD
- Mix well all ingredients.
*60g Dough
*30g Mango Filling
*24g Polo Skin
*Temperature 220°C/230°C. Time 22 minutes.
