SEA SALT CRISPY MANGO BUN

A crunchy treat with a sweet mango filling and a touch of sea salt

Fruttose Mango Filling & Topping 85%

INGREDIENTS

Ingredient A

  • 1kg High Protein Flour 
  • 180g Sugar                  
  • 40g Milk Powder          
  • 9g Instant Yeast         
  • 500g Egg                      
  • 250g Cold Water           

Ingredient B

  • 150g Butter                     
  • 12g Sea Salt                

Ingredient C

  • 600g Fruttose Mango Filling & Topping
  • 7g Sea Salt

 

METHOD

  1. Mix well ingredients A.
  2. Add in ingredients B and whip until smooth. Rest 40 minutes.
  3. Mix well ingredients C and set aside.

POLO SKIN

Ingredients

  • 140g Butter                   
  • 280g Sugar                  
  • 120g Egg                      
  • 360g Low protein flour 
  • 40g Almond powder

METHOD

  1. Mix well all ingredients.

 

*60g Dough             

*30g Mango Filling     

*24g Polo Skin          

 

*Temperature 220°C/230°C. Time 22 minutes.
